LAU, Chung
Posted: October 28th, 2025 CHUNG LAU 1934 ~ 2025 Chung Ken Lau of Lethbridge, beloved husband of the late Yick Fuen Tsang Lau, passed away peacefully with his family by his side on Saturday, October 18, 2025, at the age of 90 years.
Chung Ken was born in the Province of Guong Dong, China. In 1958, he immigrated to Canada landing in Vauxhall, Alberta to live and work at Joe Howe’s farm. In 1961, he brought Yick Fuen Tsang over to Canada where they married and settled in Lethbridge, Alberta to raise their family of four children in 53 years of marriage before Yick Fuens passing.
Dad had many years of restaurant involvement and ownership. He worked at the Golden Gate restaurant with Douglas and Mei Dong. He later became a partner and helped run the Alexander restaurant for 15 years. He moved on to the Regent Restaurant for a few years when an opportunity came up. He mentored his sons, Allan and David at Paradise Gardens in Taber, Alberta in 1991. He taught his boys all of his recipes and they successfully ran that restaurant for 12 years. The sons sold and moved to Lethbridge where Chung Ken helped them run Ciao Mein. He was hard-working, dedicated and very family oriented. When Dad was not busy with family and work, he found time to be active in the Chinese Cultural Society, Chinese Free Mason Society of Lethbridge and a proud past President of the K-Ying Po Senior Society of Lethbridge.
Chung Ken is survived by his children Lily Cousins (the late Bill Cousins Junior) Lau, Lila (Michael) Hoffman, Allan (Allyson) Lau, David (Stephanie) Lau and grandchildren; Blake and Daniel (Tylyn) Cousins, Courtney (Philip) Botterill, Douglas (Greer) Hoffman, Brenden Lau, Naithan (Partner Sarah) Lau, Adam Lau, Madison, Alycia and Jaxson Lau. Also, Great-Grandchildren, Ellie and Abbie Botterill, as well as numerous cousins, nieces and nephews.
A Funeral Service will be held at 11:00am on Tuesday, November 4, 2025, at MARTIN BROTHRS RIVERVIEW CHAPEL, 610 4 St. S, Lethbridge.
A Graveside Service will be held at MOUNTAIN VIEW CEMETERY following the Funeral Service.
